Pat the chicken dry after removing it from the brine. Start your grill on the smoke setting for 4 5 minutes with the lid open.
Add your rub or seasonings all over each chicken thigh.

Increase grill temperature to 350 and continue to roast the chicken until the internal temperature in the thickest part of a thigh is 165 or the chicken is golden brown and the juices run clear about 50 to 60 minutes.
Remove the skin if you like the rub is applied primarily under the skin so the flavor is still intense.
Prepare a grill for direct and indirect grilling with the direct side getting hot enough to sear the chicken briefly.
Put the chicken into a container and store in.
When the grill is hot and your chicken is seasoned throw the chicken thighs on.
Take the meat out of the package and rinse it off with cold water.
I like to put the rub into a ziplock bag add a piece or two of chicken then shake it.
Arrange the chicken on the grill grate and smoke for 1 hour.
Turn your grill to high and wait until the grill is nice and hot.
Grill chicken thighs for 5 minutes on each side.
Allow the chicken to rest for 8 10 minutes and serve.
Now sprinkle your thighs.

If you are using a traditional gas grill you will need to cook the chicken indirectly to avoid flareups.

Oil your grill grates with canola oil so your chicken wont stick to the grates.
